Best Chocolate Cupcakes on Earth
Ingredients
1 & ½ sticks butter, softened
2/3c. sugar
2/3c. light brown sugar
2 XL eggs
2t. vanilla
1 & 3/4c. flour
¼ t. salt
1 & 1/2t. baking SODA
1c. dark cocoa powder
1c. buttermilk
2T brewed coffee
½ c. sour cream
Procedure
- Preheat oven to 350
- Cream together butter and sugars until light and fluffy.
- Beat in eggs one at a time, adding vanilla with the last egg.
- In a separate bowl sift together flour, salt and baking soda. If using salted butter, reduce salt to ¼ t.
- In a 2c. liquid measuring cup, pour 1c. buttermilk. Add sour cream until liquid reaches the 1 ½ c. line. Stir in coffee and mix until combined. Set aside.
- Add 1/3 of the flour mixture to the sugar mixture. Mix only until combined, the scrape down bowl with a rubber scraper spatula.
- Add half of the liquid, mixing only until combined, then scrape down bowl.
- Repeat with remaining ingredients, ending with the flour mixture. Do not overbeat.
- Fill prepared cupcake pans 2/3 full using all of the batter.
- Bake for 15 – 18 minutes until top springs back when touched or toothpick inserted into center of cupcake comes out clean. Cool completely before icing.
Makes 24 – 30.
Peanut Butter Icing
Ingredients
1 & ½ sticks butter, softened
1c. peanut butter
1 t. vanilla
1# confectioner’s sugar
¼ c. milk
To make icing: Beat together butter, peanut butter, sugar, and vanilla until smooth. Add milk for desired consistency.
