Don’t you just love that tart, tangy, sweet bite when you have that first luscious taste of a creamy, cool dessert?
Me, too! These Key Lime Pie Bars are just the ticket to fill the bill. The bars are easy to make with just a few ingredients and satisfy that craving for something sweet, tart, and totally delicious. Great not just for dessert, but also for Second Breakfast, or Elevenses, or Afternoon Snack or Tea Time – or whenever. I’m sure you could add a few more occasions to that list!
I WILL warn you that although these are easy to make, you’ll have to wait a couple of hours to enjoy them until after they’ve chilled in the fridge. That’s the worst part. But then, after their cool-down time, get your tea or coffee ready and cut yourself a little piece of dessert heaven. Cant you already taste them? Let’s go!
Key Lime Pie Bars
Ingredients
- 2 c. finely crushed graham crackers (about 12-ish whole graham crackers) combined with 8 T melted butter
- 4 oz. cream cheese
- 4 lg. egg yolks
- 1/2 c. key lime juice (Nellie & Joe’s is the best)
- 14 oz. can sweetened condensed milk
- Optional: lime zest
Procedure:
- Preheat oven to 350. Press buttered breadcrumbs into the bottom (and sides if desired) of a 9 x 9 pan. Bake crust for 10. Remove from oven – no need to cool.
- While crust is baking, whip cream cheese in a bowl with an electric mixer until smooth.
- Beat in 4 egg yolks, one at a time.
- Mix in lime juice.
- Add sweetened condensed milk.
- Optional: Add in up to 2 T lime zest.
- Pour over baked crust, then return to 350 oven for 20 – 35 minutes and bake until browned (and not jiggly)!
- Let the bars cool at room temp, then cover and refrigerate for 2 hours before cutting. If there are leftovers, store in fridge.
