Can you imagine the mouth-watering surprise of a scrumptious sweet and tangy peach cobbler in the middle of winter? Super easy in a crock pot, the wonderful aroma of this dessert will prompt you to get out the ice cream and grab the whipped cream, too!
Use canned peaches in the winter, pull out your crockpot, and dessert is YOURS in about an hour and a half. Don’t like peaches? You can even substitute other fruits such as berries or apples. You’re welcome!
Peach Cobbler in a Crockpot
Ingredients
1 c. flour + an additional 1/4c.
2T sugar
1 t. baking powder
1 lg. egg at room temp
1/4c. milk
2 T butter, melted
3 15-oz. cans of peaches in juice, drained (or 5-6 large peaches to equal 6 c. sliced)
2 T. brown sugar
1 T lemon juice
1 t. vanilla extract
Procedure
- In a large bowl whisk together 1 c. flour, sugar and baking powder. Set aside.
- Then in another bowl, whisk together egg, milk and butter.
- Next stir wet ingredients into dry ingredients just until moistened (batter will be thick).
- Pour into the bottom of a greased, 5-qt. slow cooker.
- After combining peaches, ¼ c. flour, brown sugar, lemon juice and vanilla, spoon the fruit mixture over the batter.
- Cook, covered, on high until peaches are bubbly, 1 ¾ – 2 hrs.
- Serve warm. For extra deliciousness, add vanilla ice cream or whipped cream.
