One of our most requested breakfast entrees in our signature Spinach Quiche.
What I love about this is that guests SO enjoy it, and it’s SO easy to put together.
About a gajillion years and five houses ago, I was paging through my (then new) Betty Crocker Cookbook. This was in the days before the internet was even a glimmer in someone’s eye. You had to work with what you had, however great or little that was.
I found a recipe for “Swiss Pie” which was the first iteration of what we serve today. Well, I don’t like Swiss cheese, so I changed that out. In another round I added an extra egg to the dish, then later found a way to shortcut the sour cream and chopped up onion. Many years later I happily settled into this perfect, delicious go-to recipe.
Give it a shot. I promise it won’t take years to perfect!
Olde Square Inn’s Signature Quiche Recipe
Ingredients
- 3 large eggs, slightly beaten
- 3 c. shredded cheddar cheese
- 1 c. Heluva Good onion dip (Don’t use a cheap imitation!)
- 1 8 or 9” unbaked pie shell
Optional Ingredients
- We add 1 box of frozen chopped spinach, thawed with the liquid squeezed out
- You can add instead about 5-6 slices of crumbled, cooked bacon and/or
- 1-1 ½ c. chopped, cook broccoli
Procedure
- Preheat oven to 375.
- Combine eggs, cheese, dip and optional ingredient.
- Pour into unbaked pie shell.
- Bake in lower part of the oven for 45 minutes.
- Cool slightly and cut. Can be served hot, warm, or at room temperature. Serves 6 – 8.
