LEMON BISQUE

Ingredients

  • 1 Box lemon jell-o
  • 11/2 cup boiling water
  • 3 teaspoons lemon juice
  • grated rind of one lemon
  • 1/3 teaspoon salt
  • 1/2 cup sugar
  • 1 can of evaporated milk
  • graham cracker crumbs

Mix jell-o and boiling water. When jell-o mixture begins to harden, add 1 can of evaporated milk which has been chilled and whipped. Grease deep layer cake pan with butter. Generously sprinkle the pan with graham cracker crumbs. Pour in mixture and sprinkle a few crumbs on top. Cool in refridgerator at least 8 hours before serving. Lemon Bisque was always served by my Grandmother after holiday dinners for dessert. It's very light and goes well with any meal. I won second prize in a dessert contest with this recipe!
