IMPERIAL COFFEE CAKE

Ingredients

  • 1 C sugar
  • 1 egg
  • 1 C brown sugar
  • 1 tsp soda
  • 2 1/2 C flour
  • 1 C buttermilk
  • 3/4 C cooking oil
  • 1 tsp vanilla
  • 3/4 salt
  • 1/2 cup dried mixed fruit

Mix sugar, brown sugar, flour, cooking oil, and salt. Reserve 1 cup for topping. Add egg, soda, buttermilk and vanilla. Pour into greased and floured 13X9 inch pan. Sprinkle cup of crumb mixture and a little chopped nuts, ( if desired), over top. Bake at 350 degrees for 35 minutes.
